This vegan Fall smoothie is not only flavorful but also packed with the natural sweetness and creaminess of Copra's Organic Young Thai Coconut Meat. It's a wholesome and delightful way to enjoy the goodness of sweet potato in a convenient and refreshing form 😋
Ingredients
1 medium-sized sweet potato, cooked and peeled
1 cup Copra's Organic Young Thai Coconut Meat
1 cup unsweetened almond milk
1 tablespoon Copra's Organic Coconut Nectar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Instructions
Step 1. Cook the sweet potato until it's soft and easily mashable. You can do this by boiling, steaming, or baking it. Once cooked, let it cool and then peel it.
Step 2. In a blender, combine the cooked sweet potato, Copra's Organic Young Thai Coconut Meat, ripe banana, almond milk, Copra's Organic Coconut Nectar, ground cinnamon, ground nutmeg, and vanilla extract. If you prefer a thicker smoothie, you can add a handful of ice cubes at this stage.
Step 3. Blend all the ingredients until you achieve a smooth and creamy consistency. You may need to stop and scrape down the sides of the blender and blend again to ensure everything is well mixed.
Step 4. Taste the smoothie and adjust the sweetness by adding more Copra's Organic Coconut Nectar if needed.
Step 5. Pour the sweet potato smoothie into glasses. Garnish with a sprinkle of ground cinnamon, and enjoy!
