No Bake Mini Lemon Tarts

Copra's no bake mini lemon tart made with organic coconut smoothie and organic coconut nectar


Tired of energy balls? We have another option for you! These no bake lemon tarts are easy to make and packed with superfoods! Treat yourself to a guilt-free, healthy and delicious snack!

Step-by-step recipe

Ingredients

1 cup almond flour
1/2 cup cashew nuts
1/2 cup pitted dates
1/3 cup Copra’s Organic Coconut Nectar
2 cups Copra’s Organic Coconut Smoothie
2 oz Orange juiced
1 oz lemon juice
1/4 cup Lemon peel
1/4 cup Orange peel
1/8 cup Agar agar powder
1/4 cup Vanilla powder
1/4 cup Coconut oil
1 oz Orange juice

Instructions

Step 1. To a food processor add the almond flour, vanilla powder, cashew nuts, coconut oil, 1 oz orange juice, coconut nectar and pitted dates. Blend until smooth.
Step 2. Add the crust mixture into a silicone mold, then place it in the freezer for a 10 minutes.
Step 3. While the crust is in the freezer, place a pot over medium heat. Then add Copra’s coconut smoothie, 1 oz orange juice and orange peel. Let it simmer.
Step 4. Once the mixture is simmering, add the agar agar and stir continuously.
Step 5. Strain the mixture into a jar.
Step 6. Remove the crust mixture from the freezer, then pour the liquid into it.
Step 7. Garnish with lemon zest, then place it in the fridge overnight to firm up.
Step 8. Remove the tarts from the mold, and enjoy!
