Ingredients
Cake Batter
1 ¼ cup all-purpose flour
½ tsp baking soda
½ tsp baking powder
¾ cup olive oil
¼ cup orange juice
3 large eggs
¾ cup granulated sugar
1 tbsp orange zest
Caramelized apple
1 whole apple, diced
2 tbsp Copra’s Organic Coconut Nectar
1 tbsp butter
1 tsp salt
Topping Cream
1 ½ cup cold heavy whipping cream
3 tbsp powdered sugar
4 tbsp orange marmalade
1 tbsp Graza drizzle olive oil
Sliced oranges
Instructions
Cake Batter
Step 1. Start by pre-heating the oven at 180 degrees .
Step 2. With the help of a hand mixer, combine the eggs, orange juice, sugar, and olive oil. Mix it well until light and double in size.
Step 3. Add the caramel apples, and combine.
Step 4. In a separate bowl, combine the dried ingredients.
Step 5. Slowly pour the dried ingredients into the wet batter as it's mixing. Combine well.
Step 6. Pour the batter into a parchment-lined pan. Then bake it at 180 degrees Celsius for 25-30 minutes.
Caramel Apples
Step 1. In a pan, add the butter, coconut nectar, and diced apples.
Step 2. Cook it over medium heat until the caramel has formed and the apples are slightly softened.
Step 3. Add a pinch of sea salt and combine.
Step 4. Let it cool down before adding it to the batter.
Marmalade Whipped Cream
Step 1. To a bowl, add the cold heavy cream, powdered sugar, and marmalade.
Step 2. Mix it well until the desired consistency.
Final Instructions
Step 1. Let the cake cool down before removing it from the mold.
Step 2. Add the whipped cream on top.
Step 3. Garnish with sliced fresh oranges and drizzles of olive oil.
