Elevate your culinary experience with our Coconut Nectar Glazed Roasted Vegetables. Crafted with care, this dish combines assorted vegetables with our organic coconut nectar, creating a tender-crisp texture and delightful glaze.
Tossed in a blend of coconut nectar, olive oil, garlic powder, salt, and pepper, the vegetables roast to caramelized perfection at 400°F (200°C) in about 25-30 minutes. The result is a medley of flavors and textures that's simply irresistible. Whether as a side or a standalone delight, these vegetables redefine sweet and savory.

Ingredients

1 pound assorted vegetables (zucchini, tomatoes, carrots, green beens, red onion, red Thai peppers, baby corn)
1/4 cup thyme
2 tablespoons Copra's Organic Coconut Nectar
2 tablespoons olive oil
1 lemon
Salt and pepper to taste

Instructions

Step 1. Preheat the oven to 400°F (200°C).
Step 2. In a bowl, combine the coconut nectar, olive oil, garlic powder, salt, and pepper.
Step 3. Toss the chopped vegetables in the coconut nectar mixture until well coated.
Step 4. Spread the vegetables in a single layer on a baking sheet.
Step 5. Roast in the preheated oven for about 25-30 minutes or until the vegetables are tender and slightly caramelized.
Step 6. Remove from the oven and let cool slightly before serving.
