Ingredients

2 tablespoons Copra's Organic Coconut Nectar

2 tablespoon Copra’s Coconut Aminos
1 tablespoon mushroom sauce
8 oz wide rice noodles
2 tablespoons vegetable oil
1 block (14 oz) extra-firm tofu
1 red bell pepper
1 yellow bell pepper
1-2 Thai chilies
Fresh basil leaves for garnish
Lime wedges for serving

Instructions

Step 1. Cook the rice noodles according to the package instructions until they are al dente. Drain and rinse them with cold water to stop the cooking process. Set aside.
Step 2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and sauté until it becomes golden brown on all sides. Remove the tofu from the skillet and set it aside.
Step 3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced veggies, and Thai chilies. Stir-fry the vegetables for 3-4 minutes or until they are slightly tender but still crisp.
Step 4. Return the cooked rice noodles and sautéed tofu to the skillet with the vegetables. Add the coconut aminos, mushroom sauce and Copra’s organic coconut nectar.
Step 5. Toss everything together and stir-fry for an additional 2-3 minutes, ensuring the noodles are evenly coated with the sauce and heated through.
Step 6. Remove the skillet from heat and garnish the Thai Vegan Pad See Ew Noodles with sliced green onions and fresh basil leaves.
