Spanish Tomato Toast with a Greek Twist


Spanish Tomato Toast with a Greek Twist 🤩 Crunchy, fresh, and delicious! This easy-to-make appetizer or breakfast is the ultimate combo of taste + health! Made with the freshest ingredients to create the best Spring/Summer food! 😋

Ingredients 

⅓ cup ripe tomato chopped
1 big tomato whole
⅓ cucumber
⅓ cup bell pepper
⅓ cup black pitted olives / Kalamata olives
¼ cup chopped red onion
Vegan feta cheese
¼ cup sliced Copra’s Young Thai Coconut Meat
⅛ lemon zest Dressing
¼ cup olive oil
2 pinches of salt
2 pinches of black pepper
2 pinches of oregano
⅛ cup red wine vinegar
⅛ cup Dijon mustard / honey mustard
⅛ cup lemon juice
Bread 4 slices baguette
Garnish Basil, Mint, or Parsley

Instructions

Step 1. Preheat the oven to 400°F (200°C). Toast the sliced baguette in the oven until they are lightly golden and crisp, about 5-7 minutes.
Step 2. While the baguette is toasting, prepare the salad ingredients: tomato, cucumber, bell pepper, Kalamata olives, red onion, vegan feta cheese, lemon zest, and Copra’s Young Thai Coconut Meat. You can organize them in any way you desire.
Step 3. In a bowl, prepare the dressing by combining olive oil, salt, black pepper, oregano, red wine vinegar, Dijon mustard, and lemon juice.
Step 4. In another bowl, add the salad ingredients and dressing, then mix well.
Step 5. Remove the toasted baguette from the oven.
Step 6. Spoon the Greek salad over the baguette.
Step 7. Garnish with a handful of basil, mint, or parsley to add a nourishing touch.
