Pumpkin Spice Martini

SERVES 1

What you need

  • 2 shots of vanilla or whipped cream vodka
  • 1 shot Kahlua (or other coffee flavored liquor)
  • 2-3 TBS pumpkin puree
  • 1/2 cup Copra Coconut Milk
  • Copra Coconut Nectar
  • Crushed graham crackers
  • Ice
  • Pinch pumpkin pie spice
  • Cinnamon stick (for garnish)

step by step

  1. Pour coconut nectar and crushed graham crackers onto 2 separate plates (enough to fill the surface).
  2. Dip the martini glass rim in the coconut nectar, then the crushed graham crackers to prep the glass.
  3. Combine pumpkin puree and coconut milk in a cocktail shaker and shake until "frothy" 
  4. Pour in vodka, kahlua and add ice.
  5. Shake well, then strain into prepared martini glass.
  6. Sprinkle with pumpkin pie spice and garnish with cinnamon stick. Enjoy!
