No-Baked Pumpkin Eyeball

Get ready for a spooky bite with our last Easy Halloween Treat: Pumpkin Spice Eyeball Pops! 👁️
👉 Made with healthy coconut flakes, pumpkin purée packed with vitamins, and a boost of protein from peanut butter. Finished with autumnal pumpkin pie spice and a Low GI touch from Copra’s Coconut Nectar, it’s a festive treat that’s as nutritious as it is fun!

No-Baked Pumpkin Eyeball Step-By-Step

Ingredients

1 ½ cup coconut flakes
½ cup pumpkin puree
¼ cup peanut butter
1 cup cracker crumbs
1 tsp pumpkin pie spice
1 tsp vanilla extract
⅙ cup Copra’s Organic Coconut Nectar
1 cup white chocolate chips
2-3 drops of red food coloring
A bunch of sticks

Instructions

Step 1. In a bowl, mix coconut flakes, pumpkin puree, peanut butter, cracker crumbs, pumpkin pie spice, vanilla, and Copra’s Organic Coconut Nectar. Once combined, freeze the mixture for 30 minutes.
Step 2. Melt white chocolate and add red food coloring to create a "bloody" effect. Set it aside.
Step 3. Shape the pumpkin mixture into balls, then insert a wooden stick into each. Use melted chocolate to secure the stick to the bottom of the ball.
Step 4. Dip each ball into the "bloody" white chocolate, place a candy eyeball on top, and stand them upright in a short glass. Refrigerate and take them out when you're ready to enjoy!
