Ingredients

2 cups all-purpose flour
1 cup fresh mulberries
2 eggs
2/3 cup Greek yogurt
2/3 cup Copra’s organic coconut nectar
1/3 cup melted butter
2 tsp baking powder
1 tbsp vanilla

Instructions

Step 1. Preheat your oven to 375°F.
Step 2. Start by combining the egg, butter, coconut nectar, and Greek yogurt in a large bowl. Mix well.
Step 3. Once the wet ingredients are incorporated, add the flour and baking powder. Mix until everything is homogeneously combined.
Step 4. Add the fresh mulberries, then gently mix.
Step 5. Grease your standard-sized muffin tins, then pour about 1/3 cup of batter into each.
Step 6. Top the batter with a generous spoonful of mulberry thyme jam.
Step 7. Bake at 375°F for about 20-25 minutes.
Step 8. Remove from the oven, then let them cool for a couple of minutes before removing them from the tin. Enjoy!

Ivy’s Tip: You can switch from a muffin tin to a loaf pan, and it will be just like a pound cake.
