Mango Coconut Chia Pudding

Mango sticky rice is a classic for a reason, but it often comes with extra time and a heavier touch of sugar.
This version keeps everything you love about the combination, sweet mango, creamy texture, and satisfying richness. While simplifying the process and lightening it up. It’s a faster, more wholesome take on a familiar favorite, made with real ingredients and minimal effort.

Mango Coconut Chia Pudding

Ingredients

1 ripe mango, diced
1 cup Copra’s organic young coconut meat, diced
2 tbsp chia seeds
1 bottle Copra organic coconut smoothie
½ cup Greek yogurt
1–2 tbsp Copra's organic coconut nectar

For garnish:
Peanut butter (for drizzling)
Pumpkin seeds
Cacao nibs

Instructions

Step 1. Dice the mango and young coconut meat into small, even pieces.
Step 2. Transfer the diced fruit into a glass bowl.
Step 3. Add the chia seeds, coconut smoothie, and Greek yogurt. Stir well until everything is fully combined.
Step 4. Taste and add coconut nectar if you prefer a sweeter profile. Mix again.
Step 5. Cover and refrigerate for 1–2 hours, allowing the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
Step 6. Once set, give the mixture a gentle stir, then finish with a drizzle of peanut butter, and a sprinkle of pumpkin seeds and cacao nibs before serving.
