Our Low GI Pumpkin Spice Latte is a healthier twist on the beloved fall classic! With a rich blend of espresso, pumpkin puree, and aromatic spices, this recipe offers a guilt-free indulgence. We've swapped out sugary syrups for Copra's organic coconut nectar and replaced regular milk with almond milk, making it a lower glycemic index (GI) option. Whether you savor it piping hot or chilled over ice, this Low GI PSL is a cozy and wholesome treat that's easy to whip up at home. Let's dive into the simple steps to make your own comforting cup of goodness.

Ingredients

1 espresso shot
1 tbsp Copra’s organic coconut nectar
2 tbsp pumpkin puree
1 cup almond milk
1 tbsp pumpkin spice

Instructions

Step 1. Make your espresso.
Step 2. In a pot boil the almond milk, pumpkin puree, organic coconut nectar and pumpkin spice.
Step 3. Strain the milk mixture into a glass.
Step 4. Add your espresso shot.
Step 5. Top it up with frothy milk and a pinch of pumpkin spice. Enjoy hot or iced.
