Dairy Free Mango Sticky Rice Ice Cream

Dairy Free Mango Sticky Rice Ice Cream

Ingredients

Sweet Sticky Rice

1 cup sticky rice
1 cup coconut milk
½ cup coconut nectar
1 tsp salt Coconut milk sauce
⅓ cup coconut nectar
½ tsp salt
½ tsp rice flour

Mango Ice Cream

1 cup frozen ripe mango
¼ cup Copra’s Coconut Nectar
½ cup dairy free yogurt
1-3 tsp lemon juice
Half ripe mango

Instructions

Mango Ice Cream

Step 1. In a blender, add frozen ripe mango, greek yogurt, Copra’s Coconut Nectar, and Lemon juice, blend until smooth.
Step 2. Pour the mixture into a tray or bowl, then place it in the freezer for a few hours.

Sweet Sticky Rice

Step 1. Soak the sticky rice in water overnight or for 4-6 hours.
Step 2. In a steamer pot, line it with cheesecloth, then add the soaked sticky rice. Spread it in an even layer and use your finger to make holes for the steam to pass through easily. Steam for 15 minutes, then flip the sticky rice to cook evenly for another 15 minutes.
Step 3. In a bowl, add sugar, coconut milk, and salt. Stir until dissolved. Add the hot cooked sticky rice and use a spatula to spread the rice over the coconut milk. Let it absorb for 15 minutes, then flip it to the other side and let it sit for another 15 minutes.

Coconut milk sauce

Step 1. In a pot, add coconut milk and salt. Simmer it for a few minutes, then add rice flour.
Step 2. Cook until the coconut milk starts cracking.
Step 3. Let it cool down

Mango ice cream with sticky rice

Step 1. Place a scoop of sticky rice on a plate, then add a scoop of mango ice cream.
Step 2. Slice half a mango into strips, fan it out, and place it on the plate.
Step 3. Top the plate with coconut milk sauce.
Step 4. Enjoy this wonderful dessert, proudly presenting the flavors of Thailand!
