Enhanced by zesty lime juice, aromatic garlic, and the brightness of fresh cilantro, this dip offers a balance of textures and tastes that's further enhanced by the optional kick of Thai red chili peppers. Whether paired with crunchy vegetable sticks, crispy tortilla chips, or fluffy pita bread, this dip promises a tropical-infused experience that delights the senses.

Ingredients

3.5 oz Copra's Organic Young Thai Coconuts
1 ripe avocado, peeled and pitted
Juice of 1 lime
1 clove garlic
1/4 cup fresh cilantro, chopped
1 Thai red chili
Salt and pepper to taste

Instructions

Step 1. In a blender or food processor, combine the young coconut meat, avocado, lime juice, minced garlic, red chili and cilantro.
Step 2. Blend until smooth and creamy. If needed, you can add a splash of water to achieve the desired consistency.
Step 3. Season with salt, pepper.
Step 4. Serve the dip with vegetable sticks, tortilla chips, or pita bread.
