With the sweet allure of ripe mashed bananas, a touch of coconut nectar, and a sprinkle of warming pumpkin spice, this recipe is a true comfort food classic. The best part? You don't need to be a baking expert to master it. So, preheat your oven, gather your ingredients, and let's bake up some cozy, homemade goodness together. This banana bread is waiting to fill your home with the comforting aroma of freshly baked happiness 🤩

Ingredients

1 cup ripped mashed bananas
2 eggs
1 3/4 cups all purpose flour
1/3 cup coconut oil
1/2 cup Copra’s organic coconut nectar
1/4 cup almond milk
1 tbsp vanilla extract
1 tsp sea salt
1 tsp pumpkin spice
1 tsp baking soda
1/4 cup walnuts
1 banana for garnishing

Instructions

Step 1. Pre-heat your oven at 375F (190C).
Step 2. To a large bowl add the smoked bananas, eggs, vanilla extract, Copra’s organic coconut nectar, coconut oil and almond milk. Stir it well.
Step 3. In a separate bowl combine the all purpose flour, baking soda, pumpkin spice and salt.
Step 4. Gently add the dry ingredients into the wet mixture. Combine well.
Step 5. Freeze a loaf pan with coconut oil, then pour the mixture into the pan.
Step 6. Slice the remaining banana in half, then place it on the banana bread right before placing it in the oven. Step 6. Bake it for 40 minutes at 375F (190C).
Step 7. Let it cool down completely before removing it from the loaf pan and slicing it.
