Ingredients: 

  • 1 1/2 cup of oats 
  • 1/2 cup of freeze dried coconut
  • 1/2 cup cashew nuts 
  • 1/3 cup of red quinoa
  • 1/3 cup pumpkin seeds
  • 1/3 cup coconut nectar 
  • 3 tbsp coconut oil 
  • 1 tsp vanilla 
  • A pinch of salt 

Instructions

  1. Pre-heat your oven at180C/363F .
  2. Grab and measure all your ingredients. 
  3. To a large mixing bowl, add the oats, cashew nuts, pumpkin seeds, red quinoa, vanilla, coconut nectar, coconut oil, salt. Mix well. Then add your freeze dried young coconut meat.
  4. To a parchment lined baking tray, add the ingredients and spread it well. 
  5. Bake for about 15 minutes, flipping half way so both sides of the tray bake evenly. 
  6. Let it completely cool down place it in an airtight container.
  7. To enjoy your delicious and healthy granola, add it to your favorite smoothies, yogurt bowls and even salads for an extra sweetness and crunch!
