Young Coconut Meat Freeze Dried

👉 Ingredients

  • 250g all purpose flour
  • 1/2 cup coconut oil
  • 1/4 cup water
  • 1/2 cup brown sugar
  • 1/2 cup caster sugar
  • 1/2 cup Copra’s Organic Freeze Dried Coconut Meat
  • 1/3 cup coconut flakes
  • 1/3 cup sugar ginger jelly
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tbsp salt flower
  • 1/2 tsp vanilla powder

👉 Instructions

  • To a large bowl add your brown and caster sugar, coconut oil and water. Whisk it well.
  • Then to that add your dry ingredients: flour, coconut flakes, baking power and soda, salt and vanilla. Combine.
    Add your ginger and freeze dried coconut.
  • Let the dough rest in the fridge for at least 30 minutes. Then shape your cookies and let it rest again for at least 30 minutes. You can also freeze the dough and bake it when you’re ready to eat 😋
