👉 Salad
- 200g grilled corn
- 1/2 cup cooked red quinoa
- 1/4 red onion
- 1/2 cup cucumber
- 1/2 cup cherry tomatoes
- 1 jalapeño
- 1/4 cup green bell pepper
- 1/2 cup Copra’s Organic Young Coconut Meat
- 1/4 cup roasted pumpkin seeds
- 1/4 cup feta cheese
👉 Dressing
- 2 tbsp Copra’s Coconut Aminos
- 1 tbsp Copra’s Coconut Nectar
- 1 tbsp olive oil
- Lemon juice
- Freshly ground black pepper

Add all salad ingredients in a large bowl. Make your dressing adjusting to taste and combine. Garnish with more coconut meat, some feta cheese and coriander. 🥖🍞🥯🫓 Serve with bread and enjoy 🥖🍞🥯🫓
