Coconut Butter Mochi

Coconut Butter Mochi made with Copra's organic coconut nectar
Get ready to bake up some Coconut Butter Mochi magic!
It's like a taste of the tropics in every bite. With a few easy steps and everyday ingredients, you'll be enjoying these sweet delights before you know it. Let's dive into the deliciousness 😋 

Ingredients

1 egg
1/2 cup sweet rice flour
3/4 tsp baking powder
1/3 cup coconut milk
1/4 cup shredded coconut
4 tbsp Copra’s organic coconut nectar
2 tbsp vegan butter
1/2 tsp vanilla extract

Instructions

Step 1. Pre-heat the oven at 375F (190C).
Step 2. Combine the dry ingredients.
Step 3. In a separate bowl combine all the wet ingredients.
Step 4. Add the flour in batches to the wet ingredients, always fully incorporating the flour before adding more. This will assure that there are no lumps in the batter.
Step 5. Evenly divide the batter into individual muffin tins.
Step 6. Top the batter with shredded coconut flakes.
Step 7. Place it in the oven for 20-25 minutes.
Step 8. Remove from the oven and let it cool down for 5 minutes before removing from the tins.
Step 9. Keep it in an air tight container for up to 4 days.

Ivy’s note

The delicious mochi will be puffed up when they come out of the oven, but will slowly sink. That’s completely normal and it’s actually what you want to happen.
