Ingredients
Truffle Mixture
1 cup chocolate chips
⅛ cup coconut milk
⅛ cup Copra’s Coconut Nectar
1 cup coconut flakes
¼ cup orange juice
1 tbsp Orange Zest
Coating
½ cup Chocolate Chips2 tbsp Coconut Oil
Orange Zest
Instructions
Step 1. In a saucepan over low heat, combine the chocolate chips, coconut milk, Copra’s Coconut Nectar, orange juice, and orange zest. Stir constantly until the mixture is fully melted and smooth. Remove from heat and let it cool slightly.
Step 2. Once the mixture has cooled, stir in the coconut flakes until fully incorporated. Cover and refrigerate for 1-2 hours, or until the mixture is firm enough to scoop.
Step 3. Using a small ice cream scoop or spoon, scoop portions of the mixture and roll them into balls with your hands. Place the truffle balls on a tray lined with parchment paper and return to the fridge to chill while preparing the coating.
Step 4. In a microwave or double boiler, melt the chocolate chips with coconut oil, stirring until smooth.
Step 5. Remove the truffle balls from the fridge. Dip each ball into the melted chocolate, ensuring it is fully coated. Place the coated truffles back onto the parchment-lined tray.
Step 6. While the coating is still wet, sprinkle each truffle with a pinch of orange zest for garnish. Refrigerate the truffles until the chocolate coating is set.
