Chocolate Chip Banana Bread

This is my go-to “nothing goes to waste” recipe. It started with overripe bananas on the counter and a craving for something warm and nostalgic. Coconut sugar gives it that deep, caramel note that reminds me of homemade desserts growing up, simple and comforting.

Chocolate Chip Banana Bread

Ingredients

2 Ripe bananas, mashed
½ cup Copra’s organic coconut sugar
1 ½ cup All-purpose or gluten-free flour
1 tsp Baking powder
1 tsp Baking soda
½ cup soften butter
½ cup plant based milk
1 tbsp Vanilla extract

Instructions

Step 1. first, preheat the oven to 175°C and grease a loaf pan.
Step 2. next, mix mashed bananas, coconut sugar, coconut oil, milk, and vanilla until smooth.
Step 3. then, fold in flour, baking powder, baking soda, and salt just until combined.
Step 4. after that, pour the batter into the loaf pan.
Step 5. finally, bake for 45–55 minutes until golden and a toothpick comes out clean.
