Last December I spent 9 days in Luang Prabang, Laos. There I found these incredible healthy truffles in the minibar. They were rich, satisfying, and didn’t feel like a “compromise snack.” When I got home, I couldn’t stop thinking about them, so I made my own version using coconut sweetness.

Ingredients
½ cup Crunchy peanut butter
⅓ cup Copra’s organic coconut nectar
1 cup Rolled oats
¼ Mixed seeds
1 tbsp Vanilla extract
Instructions
Step 1. first, add all ingredients to a mixing bowl.
Step 2. next, stir until everything comes together into a thick dough.
Step 3. then, chill the mixture for 15–20 minutes to firm up.
Step 4. after that, roll into small bite-sized balls.
Step 5. finally, store in the fridge and grab whenever you need quick energy.
