Caramel Yogurt Bark

Cool, creamy, and irresistibly swirled, this frozen yogurt bark features velvety Greek yogurt laced with rich coconut sugar caramel, topped with tropical fruits and cacao nibs for a satisfyingly crisp, sweet-salty bite. A no-bake snack or dessert that’s both indulgent and refreshing.

Caramel Yogurt Bark

Ingredients

Coconut Caramel

1 cup coconut sugar
Pinch of sea salt
1–2 tbsp water or coconut cream (optional, for consistency)

Yogurt Bark Base

1½ cups thick Greek yogurt
4 tbsp coconut caramel
1 ripe banana, thinly sliced
¼ cup young coconut meat strips
1 tbsp cacao nibs

Instructions

Coconut Sugar Caramel

Step 1. In a small saucepan over medium heat, add the coconut sugar and 1–2 tbsp of water or coconut cream (only if needed to help dissolve).
Step 2. Stir continuously as the sugar melts and begins to bubble.
Step 3. Add a pinch of sea salt and whisk until fully melted and slightly thickened
Step 4. Let it cool slightly before using in the bark.

 Assemble the Bark

Step 1. Line a baking tray with parchment paper.
Step 2. Spread the Greek yogurt evenly (about ¾–1 inch thick).
Step 3. Spoon the slightly cooled coconut caramel over the yogurt and swirl gently with a knife or spoon to create a marbled effect.
Step 4. Top with banana slices, coconut meat strips, and cacao nibs.
Step 5. Freeze flat for 2–3 hours, or until fully set and firm.
Step 6. Break into shards or squares and store in an airtight container in the freezer.
