Copra’s Caprese Sticks

The theme for this Friendsgiving is practicality!

We all have such busy schedules all year long, during the holidays is we need a break!

This year we need to spend less time worrying about the food and more time playing games and having a laugh with our loved ones 🥰

Copra’s Caprese sticks are not only fresh & delicious, but also super easy to make, it should take only a couple minutes!

It’s colorful, fresh and vegan! Instead of mozzarella, we’ll be using Copra’s Organic Young Thai Coconut Meat.

The texture and flavor is almost identical to the cheese, and because there’s no dairy or gluten in coconut meat you won’t have to worry about your friend’s lactose and gluten intolerance 🐄🌾🚫

So here we go! It’s simple!

🥶 Start by defrosting your coconut meat the night before. Simply take it out of your freezer and place it in your fridge.

This will slowly defrost the coconut meat while keeping it cold.

🥶 Another option is to get your bag of Copra’s Organic Young Thai Coconut Meat out of the freezer and place it in a large bowl filled with room temperature water.

It should take about 1 hour to fully defrost the meat.

🥶 Changing the water once or twice might speed the process.

👉 Once your organic young Thai coconut meat is ready to go, cut it into strips.

Then grab your cherry tomatoes, basil leafs and your sticks.

I’m using wooden ones because that’s what I had at home, but you can use the stick of your choice.

When you finish gathering and preparing your ingredients it’s time to assemble.

Start by poking through two basil leafs with your stick. Then the tomato 🍅

Gently fold your coconut meat creating a ribbon looking pattern.

Finish it all with two more basil leafs under your organic coconut meat to keep everything in place.

Now, onto the extremely simple yet super delicious dressing.

Combine your Copra’s Coconut Aminos and Organic Coconut Nectar with balsamic vinegar and a couple drops of lemon juice. Whisk it well.

Then add your basil oil to enhance the basil in this vegan caprese salad on a stick 😋 aka the cutest appetizers for your #Friendsgiving #Potluck

You can also substitute the basil oil for sesame oil, olive oil and even chili oil. Don’t be afraid to get creative!

  • 200g cherry tomatoes
  • 1 cup basil leafs
  • 100g Copra’s 100% Organic Young Thai Coconut Meat 🥥
  • 3 tbsp Copra’s Coconut Aminos
  • 1 tbsp Copra’s Organic Coconut Nectar
  • 1 tsp homemade basil oil
  • 1 tbsp balsamic vinegar
  • 1/2 tbsp lemon juice 🍋
