Blueberry and Lemon Frozen Yogurt Bars

This straightforward recipe is delicious, healthy, and a great weekend activity for the fam!

Let your imagination go wild. Play around with the toppings and color combinations. Because we will be using plain greek yogurt for this recipe, you also can easily flavor and dye however you like.

Ingredients

  • 1 pound plain yogurt

  • 1/4 cup Copra’s organic coconut nectar

  • 1/4 cup homemade candied lemon peels

  • 1/4 cup frozen blueberries

  • 2 tbsp homemade blueberry jam

  • 1 tbsp vanilla extract


Instructions

Step 1. In a large bowl, combine the plain yogurt, coconut nectar, and vanilla extract.
Step 2. To a parchment-lined tray, evenly spread the yogurt mixture. Let it rest in the freeze for 10 minutes before adding the toppings.
Step 3. Cut the blueberries in half.
Step 4. Take the yogurt out of the freezer. Drizzle the blueberry jam over it, then create a swirl pattern with a fork or butter knife. Then put it back in the freezer for another 10 minutes.
Step 5. Add the remaining topping to the yogurt, then let it freeze for about 2 hours or until firm.
Step 6. Once the yogurt bar is completely frozen, remove it from the freezer and cut it into desirable pieces.

You can easily increase the benefits by adding your favorite protein powder or other health-supporting supplements to make this frozen yogurt bar more nutritious and personalized.
