Hibiscus Flower Coconut Cooler

SERVES 4

WHAT YOU NEED

  • 1/2 cup dried hibiscus flowers
  • 2 cups water
  • 4 cups (1L) Copra Coconut Water
  • 1 whole lime cut into wedges
  • 4 TBS Copra Coconut Nectar
  • Ice for serving

step by step

  1. In a large jug, mix together the dried hibiscus flowers and cold water. Cover and refrigerate overnight, at least 12 hours.
  2. When ready, strain out the dried hibiscus flowers. Mix in the coconut water. Gently squeeze and add in half the lime wedges into the jug. Mix in coconut nectar.
  3. Place the remaining lime wedges in each individual cup. Serve with ice.
