Ingredients

1 cup Copra’s Organic Young Thai Nam Hom Coconut
1 cup cooked white rice
1 1/2 cups coconut milk
1/4 cup Copra’s LOW GI Organic Coconut Nectar
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger
1/4 teaspoon ground clove
1/4 cup chopped hazelnuts

Instructions

Step 1. In a saucepan, combine the diced young coconut meat, cooked rice, coconut milk, coconut nectar, vanilla extract, cinnamon, clove and ginger powder.
Step 2. Cook over medium heat, stirring occasionally, until the mixture thickens and the rice is creamy.
Step 3. Remove from heat and let it cool slightly before serving.
Step 4. Spoon the young coconut rice pudding into serving bowls and top with chopped hazelnuts or dried fruit.
