Winter Pancake Step-By-Step

Ingredients

1 apple, cored and sliced
1 cup all-purpose flour
1 tsp ground cinnamon
1 tsp baking powder
¼ tsp salt
1 ½ cups soy milk
1 tbsp Copra’s Organic Coconut Nectar
1 tbsp vegetable oil
2 tbsp Copra’s Organic Young Thai Coconut Meat
A handful of raspberries

Instructions

Step 1. Prepare the pancake batter: In a bowl, combine flour, ground cinnamon, baking powder, salt, soy milk, Copra’s Organic Coconut Nectar, and vegetable oil. Mix until smooth and lump-free.
Step 2. Core the apples and slice them into ¼-inch rounds (or your preferred thickness).
Step 3. Heat a pan over medium heat. Dip each apple slice into the pancake batter, ensuring it’s fully coated.
Step 4. Place the coated apple slices in the pan and cook for about 2 minutes on each side or until golden brown.
Step 5. Serve the apple pancakes on a plate with raspberries and slices of Copra’s Organic Young Thai Coconut Meat. Drizzle with extra Copra’s Organic Coconut Nectar and enjoy!
