Ingredients

4 cups vegetable broth
1/2 cup coconut milk
3 stalk lemongrass, cut into 2-inch pieces and smashed
3-4 slices galangal or ginger
3-4 kaffir lime leaves
1 cup Copra's organic young Thai coconut meat
1-2 Thai red chili peppers
2-3 cloves garlic
2 shallots
2 small tomato
1 cup mushrooms
1 tablespoon Copra's coconut aminos
1 tablespoon chili paste
1-2 tablespoons vegetable oil for sautéing
Salt and pepper to taste
Fresh cilantro leaves for garnish
Lime wedges for serving

Instructions

Step 1. In a large pot, add the vegetable broth and bring it to a simmer over medium heat.
Step 2. Add the lemongrass, galangal or ginger, kaffir lime leaves, smashed chili peppers, garlic and onion to the pot.
Step 3. Simmer for about 10-15 minutes, or until the flavors meld together, and the broth becomes fragrant and slightly spicy.
Step 4. Strain the broth using a fine-mesh strainer or a slotted spoon, remove and discard the solid ingredients from the broth, leaving only the clear, fragrant liquid.
Step 5. Add the mushrooms, coconut meat, chili paste, coconut milk and remaining veggies to the strained Tom Yum broth.
Step 6. Season the soup with coconut aminos for extra flavor.
Step 7. Adjust the spice level by adding more smashed chili peppers if desired. Step 8. Ladle the hot Tom Yum soup into serving bowls. Garnish with fresh cilantro leaves and serve with lime wedges on the side.
