VEGAN Thai Red Curry Paste

Ingredients

⅓ cup dried chilies
¼ cup red chili pepper
¼ cup sliced lemongrass
⅛ cup galangal
⅛ cup salted soybeans
1 kaffir lime *skin only
3 cloves garlic
⅛ cup red onions
1 tsp salt
⅛ cup water

Instructions

Step 1. Remove the seeds from the dried red chilies and soak them in warm water for about 20 minutes.
Step 2. In a blender, combine the soaked dried chilies, chopped lemongrass, galangal, salted soybeans, kaffir lime skin, garlic, red onion, salt, and water; blend until it becomes a smooth paste.
