IngredientsÂ
Cracker Base
1 cup cracker crumbs 1 ½ cup coconut flakesÂ
½ cup Copra’s Organic Coconut Nectar
1 tbsp Lemon ZestÂ
ÂĽ melted butter
Passionfruit ToppingÂ
1 ½ cup powdered sugarÂ
3 passionfruits
â…› melted butter
1 tbsp Lemon Juice
Chocolate ToppingÂ
1 cup Chocolate chipsÂ
2 tbsp coconut milk
InstructionsÂ
Step 1. In a bowl, mix the cracker crumbs, coconut flakes, Copra’s Organic Coconut Nectar, lemon zest, and melted butter until well combined.
Step 2. Line a mold or pan with parchment paper. Pour the cracker mixture into the mold and use the back of a spoon or fork to press it evenly and firmly. Freeze for 30 minutes to set.
Step 3. In a separate bowl, whisk together the powdered sugar, passionfruit pulp, lemon juice, and melted butter until smooth.
Step 4. Remove the cracker base from the freezer. Pour the passionfruit topping evenly over the base, spreading it with a spatula for a smooth finish.
Step 5. Place the mold in the fridge and chill until the topping is firm, about 1-2 hours.
Step 6. Melt the chocolate chips with coconut milk, stirring until smooth. Pour the melted chocolate over the firm passionfruit layer, spreading it evenly. Return to the fridge and chill for another 1-2 hours.
Step 7. Once fully set, remove from the fridge and cut into bars of your desired size. Serve and enjoy!
