Ingredients
2 cups coconut flakes (1 cup for making snowballs, 1 cup for rolling)1 cup almond flour
¼ cup Copra’s Coconut Nectar
⅛ cup coconut cream
Instructions
Step 1. In a large mixing bowl, combine coconut flakes and almond flour. Mix well to ensure everything is evenly distributed.
Step 2. Add Copra’s Coconut Nectar and coconut cream to the dry mixture. Stir until it forms a thick, sticky dough. Place the mixture in the fridge for 30 minutes to allow it to firm up.
Step 3. Once the mixture has set, remove it from the fridge. Take a small portion of the mixture and shape it into a ball. Roll the mixture to form a smooth ball.
Step 4. Roll each ball in the remaining 1 cup of coconut flakes to give them a snowy, crunchy coating. Place the coated snowballs back in the fridge for another 30 minutes to set.
Step 5. Serve and enjoy your Coconut Snowballs chilled!
