Ingredients
8.8 oz Greek or vegan yogurt
1 1/2 tbsp matcha powder
2 tbsp Copra’s organic coconut nectar
1/4 cup homemade granola
1 tbsp vanilla extract
Instructions
Step 1. To a large bowl add the yogurt, vanilla extract, matcha powder, and Copra’s organic coconut nectar.
Step 2. Combine all the ingredients, make sure to fully incorporate the matcha powder. Sieving the matcha into the bowl will help prevent lumps from forming.
Step 3. Add about 2 tablespoons of the yogurt mixture to a silicone madeleine mold.
Step 4. Top the madeleines with your favorite homemade granola
Step 5. Place it in the freezer for one hour, then remove it from the mold, and enjoy!
