Ingredients
½ cup mixed nuts
¼ cup chopped red onion
¼ cup Copra’s Young Thai Coconut Meat
¼ cup fresh mint
⅛ cup lemon juice
1 tsp salt
1 cucumber
Instructions
Step 1. In a blender, combine the mixed nuts, red onion, Copra’s young thai coconut meat, fresh mint, lemon juice, and salt. Blend until you achieve a smooth and well-combined mixture.
Step 2. Prepare the cucumber by washing it thoroughly and patting it dry with a kitchen towel or paper towels.
Step 3. Using a vegetable peeler or mandoline slicer, thinly slice the cucumber lengthwise into long, thin strips. Ensure that the slices are uniform in thickness for easier rolling.
Step 4. Lay out the cucumber slices on a clean, flat surface. Spoon a small amount of the filling mixture onto one end of each cucumber slice.
Step 5. Carefully roll up each cucumber slice, enclosing the filling inside. Continue rolling until the cucumber slice is fully wrapped around the filling.
Step 6. To secure the roll-ups, insert toothpicks into the center of each roll-up to hold its shape.
