IngredientsÂ
1 ½ cup fresh avocado
ÂĽÂ cup Copra’s Organic Coconut NectarÂ
1 tsp agar agar powderÂ
ÂĽÂ cup hot water
½ oat milk
ÂĽÂ Coconut condensed milk
ÂĽÂ coconut milk
A handful of Copra’s Organic Coconut Meat
A spoonful of coconut flakesÂ
Instructions
Step 1. In a small bowl, dissolve the gelatin powder in the hot water, stirring until fully melted. Set aside to cool slightly.
Step 2. In a blender, combine the fresh avocado, Copra’s Coconut Nectar, oat milk, condensed milk, and coconut milk. Blend until smooth and creamy.
Step 3. Gradually add the dissolved gelatin to the avocado mixture in the big bowl, stirring continuously to ensure it’s well incorporated.
Step 4. Pour the mixture into serving containers or molds. Refrigerate for at least 2 hours, or until the pudding has set.
Step 5. To serve, drizzle with additional coconut milk and garnish with sliced Copra’s Organic Coconut Meat and coconut flakes. Enjoy!
