Step-By-Step Apple Caramel Cookies

Ingredients

Caramelized Apples

2 cups apples, diced
2 tbsp Copra’s Organic Coconut Nectar
1 tbsp olive oil or butter
1 tbsp cinnamon
1 tsp salt

Cookie Dough

1 tsp ground cinnamon
½ cup unsalted butter
1 tsp vanilla extract
1 egg
2 ¼ cups all-purpose flour
½ tsp baking soda
½ tsp salt

Coconut Nectar Caramel 

½ cup Copra's Organic Coconut Nectar 
2 tbsp unsalted butter 
1 tsp salt 

Instructions

Step 1. Prepare the apple filling: In a heated pan, add diced apples, ground cinnamon, and 2 tbsp of Copra’s Organic Coconut Nectar. Stir until the apples are golden brown, then set aside and refrigerate for 15 minutes.

Step 2. Prepare the dough: Melt the butter in a pot over medium heat, then transfer to a bowl and add a few ice cubes to cool slightly. In a separate bowl, whisk together the cooled butter, Copra’s Organic Coconut Nectar, and vanilla extract until light and fluffy. Add the egg and whisk until smooth. Gradually mix in the flour, baking soda, and salt until a dough forms. Fold in the prepared apples, mix well, and refrigerate for 10 minutes.

Step 3. Preheat the oven to 350°F (175°C). Scoop the dough onto a parchment-lined baking sheet, and bake for 12-15 minutes or until the cookies turn golden brown.

Step 4. Let the cookies cool slightly. To prepare the caramelized nectar, melt butter in a pot over medium heat, then add a pinch of salt and Copra’s Organic Coconut Nectar. Stir until it thickens into a caramel-like consistency. Pour into a cup and let it set.

Step 5. Drizzle the caramelized nectar over the cookies, add a pinch of salt, and enjoy!
