Ingredients

1 egg
1/2 cup all purpose flour
1/2 red apple
1/4 cup Copra’s organic young Thai coconut meat
1 tbsp vanilla extract
1 tbsp butter
Pinch of salt
Cinnamon

Instructions

Step 1. In a medium size bowl combine the flour, egg, vanilla extract, finely diced apple and coconut meat, and pinch of salt.
Step 2. To a pan add a tablespoon of butter, then portion out your mixture into 1/3 cups.
Step 3. Add the mixture to the hot pan, then let it cook for about 2-3 minutes on each side.
Step 4. Remove the hotcakes from the pan, add to a plate and top it up with Copra’s organic coconut nectar, a generous dust of cinnamon and sliced apples. Enjoy it for breakfast, afternoon snack or even dessert.
