In Ratchaburi, the process of harvesting coconut nectar is more than just a job; it’s an art form that requires skill, precision, and patience. We were fortunate enough to meet Khun Ning, a local expert who walked us through the steps of collecting this precious sap.

The process begins by identifying the mature blossom bunches on the coconut trees. While farmers used to climb the trees with their bodies, modern practices involve using ladders for safety. Once they reach the blossoms, they use a sharp tool to make a small incision at the base of the blossom. This allows the nectar to slowly drip out into a clean container attached to the blossom.

This process isn’t rushed. The nectar flows steadily, and one blossom can produce nectar for several weeks, ensuring a continuous supply of this natural sweetener.
