What you need
- 1 cup Copra Coconut Meat
- 1/2 cup Copra Coconut Milk
- 4 cloves garlic
- 1/2 tsp Dijon mustard
- 1 tsp lemon juice
- 1 1/2 tsp salt
- Black pepper
- Pinch of ground turmeric
- Vegetables to serve, raw and/or steamed
STEP BY STEP
- To make the aioli, combine the coconut meat, coconut milk, garlic, mustard, lemon juice, salt, turmeric, and a grind or two of black pepper in a high-speed blender. Process on high until smooth, about 1 minute, and the consistency of mayonnaise. If the mixture is too dry, add more coconut milk.
- Top with turmeric powder.
- Cut and arrange the vegetables on a serving platter, with the aioli in a bowl on the side.
