Cocada is one of those wonderfully simple Brazilian sweets where coconut gets to be the main event. Traditionally made with shredded coconut and sugar, this softer version uses young coconut meat, coconut milk and condensed milk for something chewy, creamy and a little caramelized around the edges.
Ingredients
2 cups young coconut meat, chopped or shredded
1/2 cup sugar
1/2 can sweetened condensed milk
1/3 cup coconut milk
1 tsp salt
Instructions
Step 1. Chop or shred the young coconut meat, keeping some larger pieces for texture.
Step 2. Add the sugar and coconut milk to a saucepan and cook over medium heat until the sugar has completely dissolved.
Step 3. Add the coconut meat and cook, stirring frequently, until the mixture begins to thicken.
Step 4. Add the condensed milk and salt. Continue cooking over medium-low heat, stirring constantly to prevent the bottom from burning.
Step 5. Cook until the cocada is thick, glossy, and starts pulling away from the sides and bottom of the pan.
Step 6. Spoon individual portions onto parchment paper, or spread the mixture into a lined tray for cutting later.
Step 7. Allow to cool completely before serving.
