Copra’s Fruit Salad

This is the easiest way to incorporate bright colors and fresh fruits into your daily meals.

You can enjoy this vibrant fruit salad with smoothies and yogurt bowls, pancakes, waffles and even leafy salads!

It’s also a great healthy snack and a way to add more seasonal fruits to your diet.

Ingredients:

This is a very simple recipe with very few steps.

Start by defrosting your organic coconut meat the night before or 2 hours before making the recipe.

Once you have your defrosted organic coconut meat and all the other fruits you’d like to use for this recipe, dice everything into small pieces. Make sure to keep the fruits about the same size for an uniform bite.

After cutting your fruits, place all the ingredients into a large bowl. First the fruits, then Copra’s organic coconut nectar, the juice of half lemon and a pinch of salt. Stir it well.

Place it in a airtight container and keep it refrigerated for up to a week.Β 

This fruit salad is simple, delicious and a very healthy breakfast option, because the fruits are packed with fiber, vitamins, antioxidants and the yogurt is made gut supporting probiotics.
