Coconut “Crab” Curry Cups

Our organic young coconut meat has this incredible ability to soak up flavor while staying light. Wrapped in crisp lettuce, it became one of those meals you don’t overthink, you just keep reaching for more.

Coconut "Crab" Curry Cups

Ingredients

1 cup Copra’s organic young coconut meat
1 tbsp Green curry paste
1 cup Coconut milk
Shallots and garlic paste
Fresh lime 
Cos lettuce leaves
Fresh cilantro

Instructions

Step 1. First, heat coconut milk in a pan over medium heat, until it “breaks”.
Step 2. Next, sauté the fragrant green curry paste.
Step 3. Add the finely chopped coconut meat and shallot garlic paste. 
Step 4. After that, add young coconut meat and cook for 2-3 minutes, allowing it to absorb the flavors.
Step 5. Remove from heat, plate it with a squeeze of lime juice, fresh sliced jalapenos, then spoon into lettuce cups and top with fresh coriander.
