What you need
- 1 cup of Copra Coconut Meat
- 1/4 cup coconut oil
- 1/4 cup olive oil
- 2 tsp Dijon mustard
- 1 TBS lemon juice
- Generous pinch of sea salt
- Freshly ground pepper
- 2 ripe avocados
- Additional toppings, such as radishes, parsley and/or micro-greens.
step by step
- Blend coconut meat, oils, dijon mustard, lemon juice, sea salt and pepper together until smooth to make vegan mayonnaise. Let cool in refrigerator for four days.
- Spread a few TBS of vegan mayonnaise on each bread slice. Add a few pinches of sea salt. Top with radishes, avocado, parsley or micro-greens.
