Avocado Toast w/ Coconut Mayo

SERVES 4

What you need

  • 1 cup of Copra Coconut Meat
  • 1/4 cup coconut oil
  • 1/4 cup olive oil
  • 2 tsp Dijon mustard
  • 1 TBS lemon juice
  • Generous pinch of sea salt
  • Freshly ground pepper
  • 2 ripe avocados
  • Additional toppings, such as radishes, parsley and/or micro-greens.

step by step

  1. Blend coconut meat, oils, dijon mustard, lemon juice, sea salt and pepper together until smooth to make vegan mayonnaise. Let cool in refrigerator for four days.
  2. Spread a few TBS of vegan mayonnaise on each bread slice. Add a few pinches of sea salt. Top with radishes, avocado, parsley or micro-greens.
