No Substitute for Fresh Coconut Milk

I’ve been searching for years for fresh coconut milk in the frozen north, as making our own is labor intensive, and many coconuts available in stores are already rotting. When I read that my favorite ice cream from my favorite ice cream shop (in Monterey, CA) used this product, I was over the moon and splurged on six liters. I’ve frozen my share of fresh coconut milk before, and was aware of the separation issues, but I was hoping that they’d figured some way around this, such as flash freezing. They haven’t. This product is chunky when thawed and may be great in ice cream or Thai soups, but it can’t be used raw or for delicate sauces, which was a big disappointment. As for flavor, the young coconut added to mature coconut gives it a very light flavor—again, perfect for delicate ice cream flavors or for soups, but gets completely lost when it’s the creaminess of coconut that’s actually called for in a dish. If you’re making poisson cru, kokoda, palu sami, caramelized coconut dessert, or a host of other dishes from Oceania, you’re better off with a guar-free canned coconut milk for large-scale offerings or shredding the coconuts yourself for at-home cooking. Sigh...
