Ingredients:
- 1 1/2 cup of oats
- 1/2 cup of freeze dried coconut
- 1/2 cup cashew nuts
- 1/3 cup of red quinoa
- 1/3 cup pumpkin seeds
- 1/3 cup coconut nectar
- 3 tbsp coconut oil
- 1 tsp vanilla
- A pinch of salt
Instructions
- Pre-heat your oven at180C/363F .
- Grab and measure all your ingredients.
- To a large mixing bowl, add the oats, cashew nuts, pumpkin seeds, red quinoa, vanilla, coconut nectar, coconut oil, salt. Mix well. Then add your freeze dried young coconut meat.
- To a parchment lined baking tray, add the ingredients and spread it well.
- Bake for about 15 minutes, flipping half way so both sides of the tray bake evenly.
- Let it completely cool down place it in an airtight container.
- To enjoy your delicious and healthy granola, add it to your favorite smoothies, yogurt bowls and even salads for an extra sweetness and crunch!
