This recipe is so delicious and so pretty that your holiday guests will believe you spend hours making it!
👉 Don’t forget to pre-heat your oven 👈
Start by making freeze dried coconut “flour”.
To make that simple add your Copra’s Freeze Dried Young Coconut Meat to a blender or food processor to turn it into a kinda wet coconuty powder. It should remind you of wet sand.
Once that’s done, add your coconut condensed milk for a vegan & dairy free option, or your regular condensed milk if you have no dietary restrictions.
Feel free to add vanilla extract or vanilla bean if you’re going fancy this holiday 😎
The dough should be done in no time, just make sure to homogeneous combine the coconut and condensed milk.
When the dough is done place it in the freezer for 5 minutes then shape it into 0.5oz balls ❄️
Once your cookies are shaped, place it back in the freezer for another 5 minutes.
Baking is easy, to parchment lined tray add your cookies then bake it at 370F for 15 minutes, turning the tray half way to ensure that all side of the cookie are evenly golden.
After the cookies are out of the oven, let it cool down for a couple minutes before placing it on a plate covered with powdered sugar 😋
Roll you cookies onto the sugar, dusting off the excess. You can keep it in the fridge up to a week in an airtight container
It’s super cute, very easy to make and you’ll only need these 3 things:
